Harvest sweet peppers green when they stop enlarging, or leave them to mellow their flavor and ripen to red, yellow or orange. Harvest hot peppers when they are yellow or red. Pick Jalapenos green. Pests and diseases are seldom a problem.
This hot Pepper is popular for canning and pickling. Its 6 to 7-inch-long waxy yellow fruits turn red at maturity. Pick the many fruits at both stages.
