German Apple Cake
In a mixer, combine eggs and canola oil and beat until fluffy. Add the sugar and beat. Add the flour, cinnamon, baking soda, 2 tsp. vanilla, salt and beat until smooth. Take bowl off of mixer and fold in apples and nuts (optional) using a spoon. Grease a 9 x 13 x 2 cake pan and pour the batter in the cake pan. Bake at 350 degrees for 50 minutes. Cool.
In a mixer, add powdered sugar, butter and 1/2 tsp. vanilla and beat until smooth. Spread the icing over the top of the cake.
