Microwave Scalloped Potatoes


  • 3 TBSP melted butter
  • 2 TBSP flour
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 2 cups milk
  • 6 medium red potatoes, thinly sliced
  • 2 TBSP minced onion


Using a microwaveable bowl for the sauce, add melted butter, salt, pepper and stir the flour in slowly so it doesn't get lumpy. Stir in the milk. Microwave on high for 8-10 minutes (stopping the microwave and stirring every 2 minutes).

In a large microwave bowl, layer the potatoes, onions, and sauce until you use up all of the ingredients. Cover the bowl with a piece of wax paper and poke small slits in it with a sharp knife. Microwave on high 18-22 minutes, stirring after 15 minutes--test with a fork to see if the potatoes are soft--if not, cook a few minutes longer. Let stand 5 minutes before serving.
