Spring Onion Baked Potatoes
Peel 6 red potatoes. Slice potatoes into chips 1/4" thick. Spray a 2 qt. casserole dish with Pam. Add sliced potatoes. Sprinkle 1 tsp. salt and 1/2 tsp. pepper over the top of the potatoes. Add 2-3 diced spring onions (every bit of each onion, stem and all). Add 2 TBSP butter or margarine to the top (cut in small pieces).
Cover the casserole with a lid or foil and bake at 375 degrees for 30-40 minutes or until done. Test potatoes with a fork for doneness. If you don't have spring onions, you can use a regular onion but it won't come out as well.
